Apples are very healthy and plentiful food source. Apples are rich in fibre, anti-oxidants and complex carbohydrates that help maintain a healthy weight, support digestion and reduce the risk of diabetes, heart disease, asthma and some cancers. Apples are also anti-inflammatory, helping to protect against muscle damage during exercise. When apple juice and cider is made, the most nutritionally rich part of the apple – the flesh and skin - is usually discarded.
Bangor University is collaborating with Welsh food and sustainable technology entrepreneurs The Pudding Compartment and Pennotec (Pennog Ltd) to make healthier, food ingredients from the pressed apple ‘pomace’ that is thrown away by drinks manufacturers. These ingredients – apple fibre and apple syrup - can replace up to 40% of the fat and sugar in whole foods - reducing food calories by up to 30% without compromising taste and texture. Once they can be supplied to food manufacturers across Wales, these clean label, vegan-friendly ingredients will help deliver targets for reducing both child and adult obesity and support Welsh Government wellbeing policy, encouraging heathier lifestyles in communities across Wales.
We’re conducting a taste test today with apple-flavoured flapjacks. One flapjack contains apple fibre and syrup and contains 20% fewer calories and half the sugar and saturated fats of the other.
Which do you prefer or do you have no strong preference?
Developing the calorie-reducing apple ingredients has involved multi-disciplinary collaboration between Bangor University staff and students and the Welsh industrial partners:
• Staff and students from the Psychology Department helped develop consumer taste testing trials and surveys - including many that took place in Primary schools across Gwynedd - which showed that healthier versions of the foods we enjoy can play a part in reducing childhood and adult obesity and improve health and wellbeing in Wales and beyond.
• The apple pomace used to make the ingredients was supplied by Anglesey-based cider and apple juice manufacturer Jaspels. Both businesses believe strongly in reducing food miles by sourcing ingredients locally and the Geography Department staff and a Masters researcher investigated how the ‘green’ credentials of the apple ingredients would influence consumers and food service outlets to buy the product.
• Research staff at the BioComposites Centre, helped develop the apple fibre product by adapting techniques used on a large scale in wood pulp manufacture to make apple dietary fibre swell up in water and fill the space in foods when fats and sugar are removed.

The Mount Elgon Tree Growing Enterprise LTD (METGE) is a is a 'not for profit' organisation, registered and based in Mbale, Uganda and is supported by the Welsh Government’s, 'Wales for Africa' programme through the Size of Wales
charity (SOW). The purpose of METGE is to manage, support and develop tree growing enterprises in Mount Elgon region in Uganda with the highest environmental and ethical integrity. In October 2019 the programme celebrated the distribution and planting of 10 million trees and it is on course to distribute 25 million trees by 2025 (25/25). METGE produces ~3.2 million tree seedlings each year which are supplied in plastic potting bags made from non-sustainable, fossil fuel derived plastics, including polyethylene. Following the supply and planting of these tree seedlings by beneficiary farmers, there is no defined method of disposing of these used potting bags as they are not recycled or re-used. In order to reduce plastics waste, including material generated from agricultural plastic mulch films which are a major environmental issue in soils across the world including Africa, one of METGE’s priorities is to develop a more sustainable agricultural film wrap to transport and supply its tree seedlings.
Bangor University and the National Agricultural Research Organisation (NARO-Uganda) are collaborating with METGE to develop a more sustainable, biobased film product for packaging of the METGE tree seedlings, which will be produced
from agricultural crop residues generated in Uganda. Valorisation of these types of residues and the commercialisation of biobased products generated from this feedstock is a key focus of the Uganda Governments THIRD NATIONAL

Article in "Advances Wales": The Journal for Science, Engineering and Technology: Researchers from Bangor University are creating sustainable food packaging from maize to reduce post harvest losses. Post harvest losses are caused by fresh produce spoilage during transportation from the farm to the market, which
typically results from the use of sub-optimal packaging materials.
These losses have a significant impact on food security, as well as farmer
incomes, in East Africa. In Uganda's fruit and vegetable sector, it is estimated that
30-40 per cent of fresh produce is wasted through post harvest losses, rising to 60
per cent for tomatoes.

- Bioeconomy Strategy workshop with Welsh Government
The workshop hosted by the Welsh Government in Cardiff was an opportunity for staff from Bangor University (BioComposites Centre) to highlight ongoing research strategy and projects linked to the bioeconomy to senior staff from Welsh Government. Ongoing efforts to link various regional biorefining initiatives, including the ERDF funded BEACON programme, through a UK wide network called BioPilots UK was also described. Those attending included Paul Henderson (Head of Bioeconomy, BEIS), Andy Rees (Head of Waste Strategy Branch, Welsh Government), Alastair Davies (Head of Innovation Policy, Welsh Assembly Government), Huw Morris (Director for Skills, Higher Education and Lifelong Learning, in the Education and Skills Department, Welsh Government), and Mike Falconer Hall (Programme Area Manager, WRAP).

I was involved in the setting up and launch of a UK network of open access biorefining centres called BioPilots UK. This was officially launched at the European for Industrial Biotechnology in Glasgow in 2016. I sit on the management board of the network (https://biopilotsuk.com) and represent the BEACON project.

I was involved in the setting up of a UK network of open access biorefining centres called BioPilots UK. This consisted of five finding member nation wide centres, including the ERDF funded BEACON programme, which is a collaboration between Abersytwyth, Bangor and Swansea Universities. I co-oridinated BEACON's input into the development and launch of this network. The aim of BioPilots UK is to develop joint research bids, opportunities for equipment sharing and staff secondments between the different centres. The founding members of this network included BEACON (Wales), IBIOC (Scotland), BDC (York), CPI (Wilton) and IFR (Norwich)

The Welsh and Chinese Governments hosted a group of four Welsh academics in Beijing (December 2014) in order to promote Agri-Food research in Wales. The aims of the visit were to: - promote the strength of Wales’ R&D in Food Supply Chain - enhance the close collaboration between Welsh scientists and the Chinese food industry and academia - help Chinese business to understand Wales’ investment environment - attract investment from China and maximize cooperation opportunities I presented an introduction to research in the BioComposites Centre, highlighting the Centre’s track record in collaborative industrial research, the different technologies available in the Centre and the strong links between the Welsh Government and Bangor University with regards to funding for collaborative research.

Gweithgaredd: Sgwrs wadd (Siaradwr) - Visit by WEFO (H2020 and Renewable Energy and Energy Efficiency Team) to the Biorefinining Technology Transfer Centre, Mona, Anglesey
Five members of the WEFO team from the Welsh Government Offices at Llandudno Junction visited the Biorefining-Technology Transfer Centre, where I provided a briefing on current BioComposite Centre biorefining projects. Equipment purchased through the project was demonstrated and samples produced were shown to the team. Those attending included Karl James (Priority Controller for Energy at Welsh European Funding Office), Amanda Thomas (WEFO Project Development Officer for BEACON) and Baudewijn Morgan (WEFO, H2020 Unit).

Those attending included Merlin Goldman (Lead Technologist- Biosciences) and Dr John Mortlidge (Lead Technologist Advanced Materials).

Gweithgaredd: Cyflwyniad llafar (Siaradwr) - BBSRC partnering award with the National Renewable Energy Laboratory, USA: Development of BioLUC- a global land use change model
As a result of BBSRC partnering award between NREL and Bangor/ Aberystwyth Universities, staff from both institutions were able visit NREL. The visit resulted in a collaboration around developing a model for global land use change. NREL subsequently released a new land use change model, BioLUC, aimed at modelling the effects of bio-feedstock production scenarios on global land use change. The model was released through the Github platform, allowing open access to the wider research community and is anticipated to play a key role in driving forward our understanding of this area. Life cycle analysts Campbell Skinner (Bangor University) and Trisha Toop (Aberystwyth University) visited NREL and worked alongside the development team as they went through final testing stages of the project.

The S-Lab Awards are organised by the Safe, Successful, Sustainable Laboratories initiative (S-Lab), in association with key disciplinary and professional bodies. The S-Lab Awards for Excellence in Laboratory Design, Management and Operation were initiated in 2012 and have been held every year since. Bangor University's 'CO2 LAB' was a shortlisted finalist in 2014.

I was part of the BEACON team presenting and answering questions from the awards jury, chaired by former Committee of the Regions President Luc Van den Brande, during the 11th annual European Week of Regions and Cities. The ERDF funded BEACON project was one of four finalists for the RegioStars 2014 awards in category 2 ‘Sustainable growth: Green growth and jobs through Bio-economy’. The RegioStars awards honour Europe's most inspirational and innovative regional projects. Finalists are selected on the basis of four key criteria: innovation, impact, sustainability and partnership. 19 finalists in 4 categories were been identified from 80 projects which are supported by EU cohesion policy funds. In addition, I was interviewed by a European television company about the project

The visit was hosted by IBERS Director, Professor Wayne Powell, along with Professor Iain Donnison, Dr Steve Fish and representatives from the partner institutions Dr Adam Charlton (Bangor) and Professor Steve Kelly (Swansea). I was able to brief the Minister on expertise and capabilities of the BEACON partners at Bangor University and highlight the pilot scale capabilities available.

Disgrifiad
Pennotec is pleased to announce a new research collaboration with Irish company CyberColloids and Bangor University’s Biocomposites Centre with the aim of addressing some factors affecting childhood obesity by making food choices healthier. This SBRI challenge-led project is overseen by Welsh Government’s Food and Drink Division and supported financially through the Welsh Government and Innovate UK’s Small Business Research Initiative (SBRI). It aims to develop new functional food ingredients from surplus food industry resources in Wales and use them to replace high calorie ingredients such as fat in the kinds of food that are particularly popular with children.
